Recipe: Pierogi Lasagna

5 lbs mashed potatoes
1 vidalia onion
2 sticks butter/unsalted
2 cups mild cheddar cheese
1 box lasagna
Sauté onion in one stick of butter. Put to the side. Cook potatoes and mash. Add milk, butter to your consistency. Odd 1/2 the sautéed onions and 2 cups of cheese.. fold in.

Make lasagna noodles. When fine time to layer. Melt stick of butter in bottom of 9×13 pan. Layer noodles, mashed potatoes, repeat. When at top— finish with mashed potatoes on top and spread the rest of the sautéed onions over the top. Place over at 350.

Put tin foil over the top and back for 40 minutes…enjoy.
