A Fun Filling Recipe To Try During Quarantine: Pepper Steak

I’ve taken it upon myself to get into new hobbies to keep myself busy during the quarantine. I recently went on a weight loss journey that is turning out to be quite successful. Here’s a recipe that is helping me shed pounds.

Serving Size 8

Ingredients 

Olive oil
Minced garlic
Seasoned salt
Ground black pepper
1 Can of beef broth
Steak seasoning soy sauce
2 Green Peppers
2 Orange Peppers
2 Red Peppers
1 Yellow onion
1 Red Onion
4 Stalks of scallions
2 pounds of sirloin strips

Directions

1.Defrost and wash sirloin strips

  1. Season strips with olive oil, minced garlic, seasoned salt, ground black pepper, and seasoning to your preference. (My suggestion is  season somewhere in middle). Place meat in a small bowl and let it marinate in the refrigerator for 15 minutes.
  2. Cut the yellow and red onion in two sections and then slice them into thin slices. Set half of the thin-sliced onions to the side for now.
  3. Cut the scallions into circular pieces and split them up in the same manner you did the onions. Get rid of the stems.
  4. Cut the orange, green, and red peppers into thin slices. Split those up into sections as well.
  5. Take a large pan and pour in the can of beef broth and place the meat and half of the onions, scallions, peppers, and 1 tablespoon of soy sauce into the pan and set on high with a lid for 30 minutes. When it cooks down add the other half of onions, scallions, peppers, 1 tablespoon of soy sauce, and 1 teaspoon and minced garlic. Stir and let it simmer for 10 minutes.
  6. Serve with rice if desired.
